Pancake Squares

We are pancake people. For breakfast or dinner we love our pancakes, especially my middle Little. A few years ago I came across this Pancake Squares recipe and figured we would like it too, and we did. The pancakes bake up light and fluffy, very filling, and very versatile. I have doubled these, baked them in a 9×13 and sprinkled one third with blueberries, one third with bananas, and the last third with chocolate chips. Today I wanted them plain to show off some real maple syrup my neighbor brought me from Canada. I only wanted to taste that sweet and delicious liquid gold! I know this is a plain recipe, simple even. But that is ok, sometimes plain is good. Try this new way of serving pancakes, it beats standing over a hot stove pouring, flipping, burning flapjacks on a hot summer day.

 

 

Pancake Squares
3/4 cup milk
2 T. melted butter
1 large egg
1 T. sugar
1 cup flour
2 t. baking powder
1/4 t. salt

Preheat oven to 350°. Lightly grease an 8×8 baking dish. In a large mixing bowl, beat together milk, butter and egg. Add sugar, then gradually beat the flour in. Carefully stir in the baking powder and salt. Pour batter into prepared pan. Bake for 20-25 minutes. Serves 4-6.

I have a new contraption to keep my pancakes warm as well. See I told you we were serious here. My girly friend got this for me from Crate and Barrel. I preheat it with boiling water, drain and add my hot pancakes. Keeps the little guys warm for a long time. We love it!

      It is a pancake warmer. I don’t kow if they still have them but it is worth a look. They work so well!

      I have yet to use it with ww flour. I imagine you could but may have to adjust a bit.

    Love this idea! They sound delicious!
    Have you ever made them the night before and then cooked them the next morning? Going to a weekend getaway, and trying to figure out if I could make these the day before and throw them in the over then next morning!

      I have never done this other than baking them the day before and saving for the next day, but be sure to seal them well so they do not dry out.

    Thanks for a great recipe! My girls helped out and we doubled the recipe, then when they were done we used big cookie cutters for our final pancakes!! They loved it. It was a tad dry so not sure if I over mixed the batter or need something else. Either way we loved this recipe!!

    Tried these today and my family loved them! I used part whole wheat pastry flour and thought that it turned out great! These will be going in our breakfast rotation! Thanks for the recipe!

    I have found that I like adding a bit of protein powder to my regular pancakes. It fills you up for longer and the vanilla tastes great!! Would the same thing work for this recipe?

      I imagine the protein powder will work fine, you may have to adjust the liquids, but it is worth a try. When I try a new recipe and do my own tweaks, I will make 1/2 of the recipe so not to waste my ingredients. If it works, then I will make the whole recipe next time! Let us know how it goes!     Hi

    Silly question – I live in the UK and just saw your recipe for pancake squares – you say 2 T Melted Butter and 2t baking powder – I’m presuming that upper case denotes tablespoon and lower case denotes teaspoon.

    Hi Robin,

    I found you through Pinterest and I have to tell you that the Pancake Squares got rave reviews at my house today. While my daughter and I are pancake nuts, my husband loathes them. So when I made these, he was skeptical. However, one bite and he told me that I should make these all the time! My daughter told me that she never wants a normal pancake again!

    Made these last weekend, they were so good! I’ll never make pancakes again! The best part was refrigerating left overs, they were perfect after just 20 seconds in the microwave.

    Just curious…and totally short on the whole time thing :) ….could I just use something like pancake mix from Crackerbarrel for my dry ingredients and it work the same? So excited about the possibility here…I’ve got a little person that would eat pancakes at every meal if I would let him!

      I have never tried it before, but it is worth a go. Try with making half the recipe so that if it bombs you only wasted a little bit. Let me know how it goes!

    Is there a benefit to adding the baking powder at the end? I’ve always sifted it together with the flour but I’m wondering if you have some secret I don’t know about :)

      No there is not benefit, you can sift it into the dry ingredients too. Either way. enjoy!

    I made these this morning for my kiddo. He loved it but….I hated them :( Not sure if I did something wrong or not. I followed all the steps and when I took it out of the oven it was a flat cornbread-like thing. What did I do wrong? I want to try again, as I assume it was something that I did!

      I don’t know. Ours turned out light and fluffy. Maybe your oven was too hot as all our ovens are different. Or maybe it was over beat?

    I just found your website through pintrest. These pancakes look great! I can’t wait to try them. I was also wondering about the name of the crate and barrel item you talked about….I would love to have one of those as I am often making breakfast at different times because of kids different school schedules. With one of these I would only need to make pancakes once! please share!

      It is the Crate and Barrel Pancake Warmer, but they do not carry them anymore. Try a google search for one. Sorry!

    Is there a way to make these Paleo? Coconut flour???

      I have yet to find a paleo version of these. It seems that all paleo panccakes with coconut flour at a tad bit cardboardy to me. At best we can make them taste good at gluten free I bet, but paleo may be a stretch for good flavor. If you do try it let me know- I have the ingredeints, just have not ventured out yet! Thanks!

    For those looking for the C & B pancake warmer that is no longer available, perhaps you could try a tortilla warmer. Those are readily available at many stores.

    Might want to change the serving size to 2 to 3 people. It was yummy I have 2 and half pieces, but I might have put it in a 9×9 pan.

    Will this work with flavored pancakes? We LOVE to put blueberries in ours and then slice a banana over it. It’s the only way we eat pancakes now. I’m just wondering if anyone has tried it with this recipe. TIA!

    Okay I think I did it wrong. When it says to beat am I supposed to use a mixer or is it all done by hand. Although mine came out as flat as a pancake it was still okay. It was just a test run but I wanna get it right for when I make them for my family.

    Just made these for dinner as my daughter requested scrambled eggs :) these are unbelievably easy and so yummy! We are HUGE breakfast for any meal people and these are so great b/c my whole family was able to eat at the same time :) Thanks for the recipe!
