I have spent most of my week concentrating on baking. My children's last day of school is tomorrow so I need to get way ahead. I have stocked up on groceries because they eat me out of house and home when they are home all day. I also purchased all my baking supplies, you know, 78 eggs (gone already- in 3 days), 10 pounds of sugar, 15 pounds of flour, 8 pounds powdered sugar, 30 packages of cream cheese, 6 pounds of butter, 5 gallons of milk, and a few other things to get us through. I am sure you are right there with me. The reason being, I can't stand hitting the grocery store right before any holiday, it's crazy!
The other day Linda of Weekend Cook left a comment on one of my posts and I am so glad she found me because guess what? I found her Cookie Dough Truffles. I love anything cookie dough. I have made Cookie Dough Cupcakes. Really yummy. As soon as I saw Linda's recipe I knew I wanted to add that to my Christmas baking. These truffles are fantastic, creamy, sweet, and so easy to make.
I like to us a toothpick when I dip truffles in chocolate. I have those nice dipping tools and I have tried the hand dipping method but I like my toothpick method the best. Once I dip the truffle and shake off the excess chocolate, I place it on waxed paper and shimmy the toothpick out. I then top each one with and extra swirl of chocolate to cover the hole and make it look pretty. I also have learned from experience to temper small amounts of chocolate at a time. This time I used Ghirardelli's Candy Coating which is very forgiving and did not bloom or scorch. I gently tempered it in the microwave using small batches in a large mug. Thanks Linda, these are so delicious, I need to go get more candy coating to make more. I gave this entire batch away!
PS- I also left out the nuts.
MULTI-TASKING MESSES
Here is the BRK under much distress. In this picture I was making and dipping truffles, baking 18 Red Velvet Cake Rolls, making Aplets, and trying to keep up with all the dishes. I was also making labels, packaging and wrapping. Shwew. Got it all done.
A NICE GIFT

I use the toothpick method too! Those look amazing. When my step-son was little he used to eat the refrigerator cookie dough without it ever being cooked!

wow! you really are baking up a storm. I'm not doing that much, thankfully. My kitchen is too small for heavy duty baking, although I miss baking like that--you feel such a sense of accomplishment.

Thanks for the wine suggestion, I'll put it on my list. This season I'm not baking anything at all this year. Of course that's probably because I make candy. I knocked out 4 pounds of peanut brittle and 2 pounds of candied almonds the other night; that felt good.

Yeah, I know just how you feel. I go with my Mom to Sam's and buy them out. Wow flour has been flying outta here too. butter, eggs, flour...zing, gone.

Great looking truffles! I agree that the toothpick method of dipping is superior. I used it for my Bourbon Balls this year and the chocolate turned out smooth and lovely.
I never thought of using cookie dough for truffles before. Sounds delicious!
