Earlier in the week I hosted a Cupcake Salon for four Distinguished Guests. The one main request was that the, "cupcakes were to be light and fluffy, not like the ones from DC area bakeries as they are too dense." Ah, light and fluffy it is. I totally understood her request, as I too have eaten many of our areas famous cupcakes and especially found the chocolate variety to be too dense, too chocolaty (yes I did just say that), and too sweet. So I went to work on dabbling with my recipes and found this one to try on my Guests. It worked and they loved these cupcakes. Perfect with sweet buttercream frosting. We also made Rainbow Cupcakes which always bring smiles.
Fluffy Chocolate Cupcakes
2/3 cup soft butter
1 3/4 cups sugar
2 eggs
1 tsp. vanilla
2 tsp. espresso powder
3 one ounce squares semi-sweet chocolate, melted
2 1/2 cups cake flour
1 1/4 tsp. baking soda
1/2 tsp salt
1 1/4 cups cold water
Cream together butter, sugar, eggs, and vanilla till fluffy (beat 5 minutes at high speed on mixer, scraping bowl occasionally.) Blend in chocolate. Whisk flour with baking soda, and salt; add to creamed mixture alternately with ice water; beat after each addition. Pour into 24 cupcake liners and bake about 18-23 minutes in a 350 degree oven or until toothpick comes out clean. Cool and decorate.

These are terrific. Yeah, not sure what the appeal is to cupcake shops. The ones I have visited always seem ... well, less (or more (in a not good way) if you count density).
love the recipe, and really love the look of the rainbow icing

I love cupcakes of all densities, but the frosting is always better on the fluffy kind :)
I love light and fluffy cupcakes - yum!
My granddaughter would love the rainbow cupcakes. I'm going to try to remember when I visit them next week!
espresso powder is awesome in cupcake batter.
would love to give this one a go and put a creamy filling in the middle, like a devil dog in cupcake form you know?
I really want to try making those rainbow cupcakes!
Fluffy looks good to me.

I'm into fluffy too, and this is the perfect recipe for that. Thanks!
Robin - were you on a t.v. commercial for dishwasher detergent??
My daughter came home and said "you know Big Red Kitchen, right?" I just saw her on t.v.!
