I tried to make cupcakes with coconut oil instead of vegetable shortening-they were ok, but not bake sale material, as they had different texture than one would expect-so I get to keep them. Made a whole new batch of choc cupcakes, which came out great. So for me, the solution was to eat my mistakes and try again!

haha great minds think alike! We did this for a bake sale a while ago, but we had "double decker" cupcakes! yum!
