One Ingredient Watermelon Cake

Summer’s gift to us is simplicity. The ability to take a fruit, slice it open, and place it on our tables without the need of adding sugar, baking, or manipulating it in anyway is a true gift. While the garden nurtures and protects the fruit and allows it to sweeten, we create ways to present it as a beautiful centerpieces to our dinner or dessert tables. I first saw this watermelon “cake” on thekitchn.com years ago and have served my watermelon in this fashion since then. Veggie Belly gives us a fine tutorial of how to make this “cake” which she originally found on Martha Stewart’s site.  Sala used a very big watermelon, where I like to use the tiny “personal” watermelons that are the perfect size for my family. Placed on a pretty platter or cake stand these no-bake “cakes” are the highlight of our summer table.

    A friend of mine and I did this for a picnic with my kids and everyone declared that watermelon tastes 1000x better when in ball form!
